Los Angeles: Hello Ludobites 8.0!!

So LudoBites is currently going on, now in its 8th edition. The reservation this time around is based on a lottery system, so whether you get a reservation is completely based on luck and if the slot they give you doesn't work, then you lose the reservation. I heard from LudoBites that it was only a 5% chance. Somehow... I was able to score a table for four this past Monday (1/30/2012)! Of course I replied and said yes :]

Same as last time, we ordered EVERYTHING on the menu. We were afraid that with just the four of us (Michael, Ray, Diana & me), we weren't going to finish everything, but figured, what the hell, only 5% of the people scored a reservation, might as well go all out! This LudoBites was definitely more... decadent and luxurious than the last in my opinion. Ingredients more exotic and there's more of a fusion from different cuisines. A lot of Japanese influence this time around. A few items really stood out while a few we didn't care too much for. There were also a few that totally surprised us in terms of the flavor and the preparation.

LudoBites for Monday, January 30th :]

saison rue
Unlike last time, there's an actual wine & beer list since Lemon Moon does have the alcohol license. It wasn't a wine sort of night for our party so we went with the 750ml beers on the menu, both from The Bruery in OC. The Saison Rue is a light Belgian and perfect beer to start the night with.

saison rue
Really good Belgian, with a hint of fruity note. Saison generally refers to a French farmhouse pale ale with low alcohol content, but the Saison Rue has about 8.0% and unfiltered so you can actually age the beer!

brioche seaweed yuzu butter
First up: Brioche with Seaweed Yuzu Butter! Now... what part about that does not sound good? Buttery brioche bread then smeared with a "healthy" dose of the seaweed yuzu butter. The yuzu just pops. We split the bread 4-ways and there was a little bit of butter left over from the knife... so I just licked the butter. Yum :]

chicken tandoori crackling
We absolutely loved the Chicken Tandoori Crackling. Fried chicken skin with tandoori spices, then topped with liver mousse and sea salt. The whole thing is a bit salty but we didn't really care cause it was so damn good! Who doesn't like crispy chicken skin?? It looked like a pita chip with some hummus on top, but nope, it is chicken skin!

big eye tuna, tahitian vanilla, somen, 7 flavor vinaigrette
So the meal started out with a dish with Japanese influence (yuzu), the Big Eye Tuna with Tahitian Vanilla, Somen, Basil and Seven Flavor Vinaigrette is straight up Japanese-esque with the exception of the basil. Tuna was great and the basil is very refreshing. I'm going to guess the seven flavor means the seven spice Japanese or Chinese uses. The somen was a little meh.

sweet shrimp, miso cream, smoked salmon, cannellini
Another dish with Japanese influence: Sweet Shrimp with Miso Cream, Smoked Salmon, and Cannellini Beans. The miso cream was definitely the star in this dish and the creaminess went very well with the smoky smoked salmon.

raw beef, radish, beets, eel
Like last time, there's a beef tartare dish: Raw Beef with Radish, Beets, and Eel.

raw beef
Right beside the raw beef, there's this frozen thing... I do not know what it is but it is sorta frozen by nitrogen or something.... it was good hahah.

my creation
My little creation!

awesome beer
We decided to go with the Trois Poules Francais from The Bruery for our second bottle of beer, which is this Belgian-style dark ale that's brewed with syrah grapes and then aged in wine barrel! You definitely taste the tart acidic grape and all the usual flavors you'd associate with wine, except in a beer! The sommelier referred to it as a sour-mash style beer. I've always wondered what wine + beer would taste like, although I'm sure it won't taste as good as this in real life :P

trois poules francais
Absolutely amazing beer. The first sip is very surprising with the tartness hitting you right away. I actually tried to find it at Bevmo and Total Wine but they sold out months ago since it was a winter release. Boo. I did find 4 bottles of Saison Rue at Total Wine and cleaned out their inventory haha.

foie gras, tamarin, turnips, daikon
Foie Gras with Tamarin, Turnips, and Daikon. The flavors are very surprising and totally wakes you up thanks to the tamarin. I never had foie gras in a soup either so that was a very interesting experience. It's almost like.... eating uni. In fact, it tastes like uni!

foie gras
Soft... smooth and melt-in-your-mouth foie gras.

scallops, leek, potato, black truffles
Scallops with Leek and Potato Sauce then topped with Shaved Black Truffle. I heart truffle so I could not wait to dive into this dish. Truffle oil is a common ingredient nowadays with many restaurants serving up some sort of dish utilizing the oil, but if you've never had fresh truffle... it is totally different. The flavors are much more subtle and earthy, instead of the intense flavor from the oil.

raw scallops
The sauces were a nice complement to the shaved truffle. Not a huuuuge fan of raw scallop but it was fresh at least :P

john dory, squash, fennel, tonka beans,
John Dory with Squash, Fennel, Tonka Beans, and Lemon sauce. John Dory is a name for a type of fish, and not a pretty one :P However, when pan fried then topped with all sorts of sauces, it was pretty good. The lemon sauce to the side was definitely the best since lemon + seafood just go so well together.

monkfish liver, cucumber, cornichons, mustard seeds
I didn't care too much for the Monkfish Liver with Cumcumber, Cornichons, and Mustard Seeds. There's already too much "liver" by the time we got to this dish with foie and the mousse.

monkfish liver
The few bites I did take was good though since the liver had a very buttery texture and when paired with the pickled cucumber, it was a nice contrast.

pickles & mustard
Pickled cucumber and the sweet mustard seeds.

duck, orange, olives, carrots
Like last time, there's also a duck dish: Duck with Orange, Carrots, and Olive Spread. Duck with skin still on it = win. I did like the duck a lot more this time than LudoBites 007's.

duck
Sweetness from the sauce goes very well with the salty olive spread. Loved the candied orange peel too!

jidori half chicken, parmesan, celery root soubise, walnuts
Biggest entree of the night: Jidori Half Chicken with Parmesan, Celery Root Soubise, and Walnuts.

jidori chicken
It is also my favorite "main dish" of the night. The chicken was super tender and moist. Michael was not a fan of the celery root "foam" but I liked it :P

goat cheese profiteroles, pistachio, crispy leaves
Goat Cheese Profiteroles with Pistachio Spread and Crispy Leaves. The only dish that night that I didn't like. Profiteroles is essentially a cream puff but I didn't get too much from the goat cheese and the crispy leaves, most likely kale, weren't crispy enough so it was really oily. The pistachio spread though, was A+. Give me toast and I'll be happy with just the pistachio spread haha.

goat cheese profiteroles
... totally forgot about that green sauce but that's not the pistachio spread :P Pistachio is underneath the profiterole, with that mustard green color.

open kitchen
Chef Ludo on the right working hard haha.

lemon meringue & poppyseed crumble
Of course, gotta go for the desserts! This time around, there's no weird and crazy combinations, just classics with a little twist. My favorite out of the two they offered was the Lemon Meringue & Poppyseed Crumble with Extra Virgin Olive Oil. It is essentially a deconstructed lemon meringue pie with the poppyseed crumble acting as the pie crust. Strong lemon flavors with the light & fluffy meringue, the dessert is give a bit more fruity flavor with the EVOO. There's also some candied lemon peel!

apple tartin & ice cream
Apple Tart Tartine with Salted Caramel and Orange Creamsicle Ice Cream. A very... nostalgic sorta dessert with a LudoBites version of apple pie and a flavor from many people's childhood, orange creamsicle. The salted caramel sorta brings you back with the nutty buttery sweetness. There's also these little seeds on the side, and we guessed it was fennel seeds? That was interesting, but we mostly left it alone :P

apple tart tartin
Apple tart tartine and the salted caramel. Apples were not too mushy and still had a bite.

orange dreamsicle ice cream
Orange creamsicle ice cream. I want more.

All in all, we had a great time, sampling all the dishes. LudoBites is really more about the experience and eating a dish that you probably won't see ever again. In the end our bill was about $97 per person... so it is a little pricey. I was a bit sad that I didn't get to try the Uni Creme Brulee since it was the most popular dish served this time. However they couldn't source the uni from their supplier so they didn't offer it that night... sigh. Since the menu changes daily, with some staples, everybody's LudoBites experience can be different.

Maybe I'll do a walk-in...

FAWK

@#$(*!)@($*! I lost my S95 so... I lost all the pictures I took in Dallas.

Dammit I'm just not meant to have the S95 or something.

SF: Donuts, Burrito, Beef Tartare

In Dallas currently with nothing to do, so decided to do a short post for the time I was in SF this past weekend!

Before I left for Tahoe last Friday, Ahrhan and I stopped by Dynamo Donuts for a quick breakfast. Ever since I had it last time, I've been waiting for the day that I could go back and bite into their tasty fried goods. This time I got there a little bit late so a few donuts were gone but still got to try 3 new ones!

Dynamo Donuts & Coffee
2760 24th St (between Hampshire St & York St)
Mission, San Francisco, CA 94110
www.dynamodonut.com

offerings of the day
They didn't have the Strawberry Earl Grey, which was my favorite here last time :[

partner in crime
HAHA she thought I was taking a picture of the donuts.

donuts
Went for the Molasses Guinness and the Meyer Lemon Huckleberry. Meyer Lemon Huckleberry was whatevers... but...

spiced apple
The Molasses Guinness was surprising and tasty. A molasses donut with pears then topped with a Guinness glaze. At first we thought they gave us the wrong one but is definitely the molasses donut since it had a darker hue than the other donuts.

holey donuts
Darker coloring = molasses. It has more of a flavor than brown sugar.

chocolate
Also got the Passionfruit Milk Chocolate and the Chocolate Rose Geranium Hazelnut.

chocolate hazelnut
Chocolate Rose Geranium Hazelnut. Yup, a hazelnut donut with a rose geranium chocolate glaze. First bite, you get a flavor of the rose, then the geranium hits you. If you know what the geranium flower smells like... well, it tastes EXACTLY like it. It's a bit weird, and definitely a... hipster-ish donut :P

passionfruit milk choco
Last time when we came, the Passionfruit Milk Chocolate was my 2nd favorite and the glaze was still wet from the warmth of the donut! Not as fresh this time but still very tasty. Tangy and the milk chocolate bits give it a bit of sweetness.

latte
Of course had to get a cup of latte. Not gonna lie, SF peeps really know how to make some good coffee.

mocha
Ahrhan's mocha.

Afterwards, met up with Justin, who's taking me to Tahoe and the three of us decided to grab a quick lunch before Justin and I left. Justin recommended eating at this Mexican joint near his place.

The Little Chihuahua
292 Divisadero St
(between Haight St & Page St)
San Francisco, CA 94117

funny logo
On the way there saw this weird and hilarious logo of this restaurant O_O Wth is going on??

the little chihuahua
Little Chihuahua. It's not the traditional Mexican restaurant... more California Mexican.

salsa bar
Salsa bar. They have some great salsas.

salsas
Pico de gallo, roasted tomato, tomatillo.

chips
Free tortilla chips! My favorite was definitely the tomatillo salsa.

chili verde chicken burrito
Went with a chili verde chicken burrito, with chili verde chicken, black beans, rice, salsa, cabbage salad, and pico de gallo.

burrito
Very clean tasting and you don't feel any grease or any heaviness after you eat! All the meats are sourced from sustainable farming also. Very SF :P For each bite I tried it with different salsa and they all go very well with the burrito.

After I got back to SF from Tahoe, I had a few hours to kill before my flight back to LA so I met up with Tiffany and Jordan for dinner at Bluestem Brasserie, which is a fairly new restaurant, but good, in SOMA.

I took the pictures with my iPhone since I forgot my camera... so it's gonna suck :P

Bluestem Brasserie
One Yerba Buena Ln
San Francisco, CA 94103
Neighborhood: SOMA

steak tartare
Steak Tartare with quail egg, mache, and pistachio oil. Solid solid solid. The mixed quail egg is a must to make everything bind together. Comes with toasted bread to eat with and you can really tell that Bluestem has some high quality beef.

steamed mussels
Steamed Mussels was recommended by our server. She mentioned how it was steamed in Pinot Noir rather than how it is done traditionally in white wine. You can definitely taste the red wine but not very apparently. The mussels were just alright but the sauce was great to soak the toasted bread in.

roasted half chicken
Roasted Half Chicken with brussels sprouts, garlic jus, and a side of macaroni & cheese. RIDICULOUSLY tender. I didn't really expect much since it is just a roasted chicken but my goodness, it is one of the most tender chicken I've ever had. We just used the regular knife they provided and it just comes apart. The mac & cheese and the brussels sprouts were great as well. Mac & Cheese is not too cheesy to make you sick after a few bites and I like how they caramelized the brussels sprouts.

butter beans
Butter Beans with Escarole, which is butter beans, garlic, and endives. A lighter and healthier side. I like how they have whole chunks of garlic in there.

arugula salad
Arugula Salad with candied walnuts, blue cheese, and pear. I just wanted some greens so decided to go for it. It was good but... portion is somewhat laughable :P

We also got the Kennebec Truffled Fries and Spinach Currants and Capers but the pictures I took with my iPhone was just horrible...

Hmmm... I think I'm ready for another trip back to to SF already. More Dynamo, try some more of Bluestem's menu, and discovering more!

Cabin Cookin'

I love to board. Been boarding for quite a few seasons now so I always try to plan a boarding trip or at least attend a trip. To me, staying in a cabin, cooking, and eat with a good group of friends is one of the best part of the trip! It's always interesting too, because depending on the group I go with, the type of food changes, dramatically. Right at the beginning of 2012, I was able to go on two snowboarding trips and it is the perfect example of how two different group of friends eat so differently!

First trip I went to Big Bear and booked a cabin for 7 of us. If you're into snowboarding, Big Bear is not exactly the ideal destination, but it is close to SoCal and less troublesome in terms of travel time, which also meant we were more flexible in bringing up the items we wanted to eat and we decided to go the Korean/Mexican route. The drive is only two-three hours so we weren't afraid of food spoiling during the travel time so there was no problem hitting up a Korean market and a Mexican meat market! Here's just a little of what we made:

dinner prep
Prepping for dinner. Lighting at the cabin was HORRIBLE... so some of the pictures might be blurry :P

dinner
Glimpse of our dinner table hahah.

kimchi
Three Koreans in the group so of course we had kimchi :D

carne asada
Carne Asada from La Venadita, which is this awesome Mexican meat market in Carson. It's always a must whenever we gather for any occasion. Comes marinated and ready to be cooked!

carne asada w/ guac & salsa verde
Add some guac, some salsa verde... and that is one bomb carne asada taco :]

ramen salad
Made some ramen salad, using the same recipe from the Thanksgiving dinner.

chadol
Rather than getting marinated mean, we got a ton of chadol, aka brisket from Korean bbq, and just pan fried it since we didn't have a griddle. Still just as good! We actually also made pork belly but... we killed it before I remembered to take a picture of it haha.

breakfast of champs
For breakfast, we had a lot of food leftover so we decided to continue on and add a few more items :P

chadol for breakfast
More brisket with sesame oil for breakfast :P

kimchi fried rice
Since we had rice left from the night before, decided to make one of my favorite, kimchi fried rice! Even the Koreans said "not bad" :P

chadol omelette
Since we still had some brisket left over, decided to toss it in and made a chadol omelette!! That's definitely a first for me haha.

-

The next weekend, I took off for Tahoe with a quick stop in SF (next post). Like I mentioned, the food brought and cooked all depends on the dynamic of the group. This time around, the group had no Koreans and we were all guys (8 of us) so you can imagine what type of food we brought along hahah. Also, we weren't too familiar with the Folsom, where we stopped for food, so we went crazy at Costco, buying tons of frozen food, while others stopped by Harris Ranch on the way from LA and picked up some bombtastic steaks.

bbq
Filets cooking on the grill.

harris ranch rib eye
Beautiful piece of Harris Ranch rib eye! We actually bought these from the actual location of the ranch, although you can find Harris Ranch beef at Gelson, Sprout's, and higher end specialty markets. I've even seen Harris Ranch burger patties before at Costco :P

rib eye & filet
Dinner: Harris Ranch filet mignon & rib eye.

carving
After we let it rest so the juices won't flow out, Jimmy carved it up so it is easier to share. Perfectly cooked.

beautifully done
Damn that's pretty.

steamed fish
Jimmy & Edwin went fishing before we left for Tahoe and they even caught two fresh bass!

bass
Small, but damn it was fresh and tasty.

cooking breakfast
Edwin, one of the cooks of the weekend, making eggs for breakfast.

maple cured bacon
Maple cured bacon from Costco. Must be one of the best bacon I've had.

caramelized onions
Caramelized onions in bacon fat.

sausage breakfast style
I found some Aidells Habanero Pepper Jack Sauasages at Costco, so we grilled it up and served it as breakfast sausages. I wanted my breakfast items together, so got a hot dog bun, added a fried egg, the sausage, and some pepper jack cheese!

with BBQ sauce
Then I added a piece of bacon with caramelized onions cooked in bacon fat and Sugar Ray's BBQ sauce. What a perfect breakfast sausage :D BTW if you've never had Sugar Ray's BBQ, GET IT. They have it at Ralph's. It was and still is my college roommates and my favorite!

eggs
Of course gotta have eggs for breakfast. I think we killed 4 dozen eggs that weekend :P

I'm actually sad cause when I was looking through my camera I realized I completely forgot to take pictures of the dinner on night two and the breakfast when we made breakfast burgers! I'll admit... I wasn't exactly sober on night two and my excuse for forgetting to take pics of the breakfast burgers was cause we still had to clean up the place before we left at 11am :P

The snow sucked this year... really hard, but at least ate well for both trips, and good food with good friends always result in an awesome trip!
